Chickpea Salad

Chickpea salad is easy to make and comes together fast. It’s perfect for lunch since chickpeas are protein packed and leave you feeling satisfied for hours.

Ingredients

(1 serving)

  • 2 vine tomatoes
  • 1/2 cucumber
  • 1/2 medium red bell pepper, chopped
  • 1/2 red onion
  • 1/2 cup chopped celery plus leaves , about 2 ribs
  • 2/3 cup chickpeas/garbanzo beans (cooked, canned)
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp hemp seeds
  • some salt
  • some pepper
  • 1 handful of green salad

Directions

  • Rinse chickpeas with water and drain.
  • Wash and trim the lettuce and vegetables. Chop finely and place in a salad bowl. Drizzle with oil and vinegar and season with salt and pepper.
  • Stir in chickpeas and sprinkle with hemp seeds.
