Matcha and Ginger Overnight Breakfast Shake

This gorgeous shake backs up its looks with nutrition and flavor. As a bonus – it’s super easy to put together, too! Refrigerate this matcha and ginger overnight breakfast shake the night before, and it will be ready to go in the morning. I love how easy that is!

Ingredients

(2 servings)

  • 1 1/2 cup fat free coconut yogurt (this is vegan yogurt, plain Greek yogurt can be substituted)
  • 2 teaspoons matcha powder
  • 1 banana
  • 1/2 teaspoon ground cinnamon
  • 1 cup coconut milk
  • 1 teaspoon fresh ginger, minced
  • 2 teaspoons maple syrup (optional)
  • 1/4 cup chia seeds

Directions

  • In a blender, combine the yogurt, matcha, banana, cinnamon, coconut milk, ginger, and maple syrup (if using). Blend until smooth. Stir in the chia seeds.
  • Pour into serving glasses, cover, and refrigerate overnight.
  • Before serving, remove from the refrigerator. If too thick stir in additional coconut milk. Serve and enjoy!
